Tangy California Apricot Vinaigrette

1  (15 1/4 oz.) can California apricot halves, drained
2 tablespoons balsamic vinegar
2 tablespoons water
1 large garlic clove
1 teaspoon fresh thyme
2 tablespoons olive oil


Makes 1 cup

Combine first five ingredients in a blender; blend until smooth.  With blender running, slowly add olive oil; blend until smooth.
